2008 Short Course Offerings
Overview Short Courses are open to all industry personnel with priority registration given to individuals from PMCA member companies. Details and registration forms for each course will be mailed to all PMCA personnel approximately 15 weeks before each course and will also be posted on this web page (see below). Most courses are four days long in order to accommodate the regular job demands of participants.

Chocolate & Compound Manufacture & Use When: October 28-31, 2008
Where: Wolfgang Candy Company- York, PA

This four day, interactive course, led by recognized experts in the field, will cover an extensive theory review of chocolate and compound technology. It will also include a special tour of the Blommer Chocolate Company and a visit to Readco Kurimoto, LLC.
Special Guests:
Beth Kimmerle Brian Donaghy
There will be a special presentation by renowned confectionery author and candy historian, Beth Kimmerle. Beth has made appearances on the Food Network and the History Channel. You may also know her as the author of PMCA’s newly released history book, Sweet Times.
Skilled confectionery artisan, Brian Donaghy of Tomric Systems, Inc. will demonstrate chocolate decorating techniques and assist students with adorning their own creations.
